Healthy vegan bean pastries

These salty pastries are a vegan, gluten-free recipe, easy to prepare and perfect for a healthy lunch at home or at work. These bean pastries hold all the goodness of nature for our body and soul. Treat yourself right and rise your bright.

Ingredients: 1 can of kidney beans* (or other at your choice), chopped fresh parsley (at your taste), 1 Tbsp sesame paste* (tahini) or peanut butter* (unsweetened), 2 tsp grounded flax seeds, 2 tsp maize starch, 1/4 tsp salt**, 1/4 tsp ginger (powder), 1/4 tsp coriander (powder), 2-3 Tbsp water.

Mix all ingredients in food processor until smooth. Fill in silicone muffin cases until half and bake with love in pre-heated oven at 220 ºC (or 428 ºF), for ca. 20-30 minutes, until crusty outside. Enjoy this protein-packed, vegan treat in consciousness of all the goodness you are bringing within and without.
