This raw dried fruit jam is natural and healthy, easy to prepare and free of added sugars. It contains just the natural sugars of dried fruit (fructose) and holds all the goodness of nature’s vegan foods. Try it on your favorite brown rice crackers* and you won’t buy any other jam for sure.
Ingredients: 1/2 cup dried fruit* (e.g. dates, apricot, prunes, figs, etc), 1/2 cup water, 3-5 Tbsp apple cider vinegar* (at your taste), 1/4 tsp pectin (powder).
Soak your chosen dried fruits in water and apple cider vinegar for 4-6 hours (you may want to leave it in the fridge, specially in summer). Add the pectin and blend all ingredients in food processor for 1-3 minutes until smooth and homogeneous. Store in mason jar in the fridge. It will last for 2-4 weeks (if you are lucky enough to forget about it 😉). Pectin when blended with water and dried fruit will act as gelling agent. Apple cider vinegar will act as a natural preservative; adjust it to your taste (I like it bitter-sweet). Usually I make batches of one type of dried fruit. This week, I tried a mix of dates and dried mango. Guess what? It’s amazing! Give it a try! Whatever the case, enjoy with awareness and no guilty – its natural, its healthy!
